Cheese from Beira Baixa Region
Our local producer is Queijaria Almeida whose mission is to manufacture cheese cured from raw sheep's milk and goat's milk and pasteurized sheep's cheese curd. It is assumed as a reference company in the national, Community and extra-community market.

- Castelo Branco Sheep Cheese Cured: This is a normal curing product or prolonged cure. When it is not of prolonged cure it has a typical aroma of sheep and slightly acidified flavor. It has a thin crust of yellow color and inside it a soft paste of the buttery type. When Prolonged Cure has a moderately stronger taste, hard crust of yellow color and inside, hard paste;
- Spicy Cheese from Beira Baixa: Cheese made from sheep's milk and goat's milk, prolonged curing, about 120 days, matured in rye straw. Taste strong, slightly spicy, conferred by prolonged maturation. Greyish white crust.
